Plain-language change summary

The recent changes to Bill SB 457 clarify the definitions related to food preservation, specifically addressing the terms "acidified" and "canned food." The new definition of "acidified" focuses on achieving a specific acidity level (pH of 4.6 or below), while the definition of "canned food" has shifted to specify that it must be stored in air-tight, vacuum-sealed containers. These adjustments help ensure safer food practices and provide clearer guidelines for food producers and consumers, reflecting a better understanding of food safety standards in cottage food production.
